Amma's Spinach Soup--Sandy Nayak

Fry in 2 tablespoons (or a bit more) olive oil:
1 large onion, chopped fine
2 or 3 cloves of garlic, chopped
2 to 3  tsp. whole cumin seeds

Add:  
1 pound bag of chopped frozen spinach
Cover, thaw in own steam; add a little water if needed

1 quart box of alternative milk (rice dream, soy, almond, coconut)
Put some "milk" in blender, add some of cooked spinach mixture, blend well
Put blended mixture in clean pan
Blend the rest and add to pan.  Usually takes 3 or 4 blender loads,
Clean the blender with a bit more water, add to pan
Bring to a boil again
Add salt to taste

Serve hot
